Frozen Greek Yogurt with Orange & Cocoa Nibs
I am not a big fan of “fro-yo”. It lacks the creaminess I seek from a frozen dessert and the flavors taste artificial (since they often are). Here is my alternative: lightly frozen 0-2% Greek yogurt with honey, orange, Lillet and cocoa nibs. Completely natural, lightly sweetened but not sugary, with seasonal citrus and a bitter chocolate-y crunch to bring it all home. I came up with this recipe the other night after clearing a last minute dinner party, only to find that I had completely forgotten a dessert. Greek yogurt, my refrigerator standby, to the rescue! Mix it up, lay out the plates, scoop two quenelles per person, make some freezer space, and serve an after dinner drink while they chill… Boom.

Freeze Time: 20-30 minutes
Serves 2 people
Ingredients:
6 oz. (170g) Greek Yogurt, 0-2%
¼ Zest of an Orange
1 cap Lillet Blanc
1 tsp Raw Orange-Blossom Honey
1 ½ Tbsp. Cocoa Nibs*
Technique:
•Combine yogurt, orange zest, honey, Lillet and half the cocoa nibs.
•Serve alone or garnish with a biscuit, fresh fruit and a glass of Lillet.
